Garlic and Parmesan Carrot Fries


Carrots are often overlooked. But fresh, roasted carrots with garlic and parmesan is a whole other story. Don’t forget about the dipping sauce because it compliments the carrot fries perfectly.

INGREDIENTS
  • 3 large carrots, peeled, ends cut off.
  • 3 tbsp olive oil
  • ¼ cup grated parmesan cheese
  • 2 tbsp garlic powder
  • 2 tsp dried parsley
  • ½ tsp salt
  • ¼ tsp pepper
  • ⅓ cup full fat plain Greek yogurt
  • 2 tsp lemon juice
  • 1 tsp garlic powder

  • ⅛ tsp pepper
  • ¼ tsp red pepper flakes, optional
