Pink Champagne Pork Chops

Ingredients:

4 tablespoons butter
1/2 shallot, finely chopped
4 thick-cut pork chops
salt and pepper
2 cups pink champagne
2 tablespoons sugar
2 cups strawberries
1 teaspoon fresh rosemary, chopped

Directions:

1. In a large skillet, melt butter over high heat. Add shallot.
2. Sprinkle pork chops generously with salt and pepper. Place in hot skillet, cooking until both sides are golden brown.
3. Add champagne and sugar to the skillet. Cover with a lid and turn heat to medium. Cook for 5-10 minutes, or until pork chops are cooked through.
4. Remove lid, transfer pork chops to a serving platter. Turn skillet heat back to high, whisk until the mixture reduces to half. Toss in strawberries and rosemary. Simmer for 1-2 minutes.
5. Drizzle sauce and place strawberries atop pork chops, and serve.
