Creamy Yoghurt Aubergines By Indian Cook Mallika Basu

A little labour of love, these shallow fried aubergines are doused in a mustard and yoghurt dressing and then topped with sizzled spices. A lunch table favourite from my family home, this makes an excellent barbecue side in the event you are already dreaming of warmer weather. I say labour of love because the aubergines do have to be soaked in salty water first to remove any bitterness and help them cook later. As for the shallow frying, it really does make a difference to the end result so crack the oil out.
