Savoury Mushroom Stuffed French Toast

28 November marks International French Toast Day – a day that honours this amazing breakfast delight and encourages you to enjoy it with a few friends.

French toast is basically eggs and bread. We automatically think of it as a sweet breakfast food with syrup, nutmeg, cinnamon and powdered sugar. But with a base of bread dipped in eggs, the possibilities are not limited to cloying sugary applications.

Ingredients

  • unsliced loaf of crusty bread
  • chopped mushrooms
  • garlic
  • shallots
  • baby spinach
  • ricotta cheese
  • Parmesan cheese
  • eggs
  • milk
  • salt

Cut the one side of the bread into thick slices, to create a pocket in the middle of the bread.

Saute the finely chopped mushrooms, garlic and shallots in olive oil, then stirring in baby spinach until it wilted.

Let this cool then stirred it into some ricotta cheese and Parmesan cheese. Season with salt.

Carefully spoon this mixture into the bread slice pockets.

Set the bread slices into eggs whisked with a bit of milk and salt and let them soak for about 30 seconds per side.

Cook in a skillet with olive oil and butter until nicely browned on both sides. ENJOY!
