Chocolate Chip Blondies

The brownie’s unbelievably tasty cousin. Can you believe it took so long for the world to discover blondies? It’s genuinely amazing that they just weren’t a popular dessert item until relatively recently. These blondies combine the classic chocolate chip cookie flavor with the decadence of a brownie. There’s nothing to dislike here. Absolutely nothing.

They’ll take you around 10 minutes to prep, 20 minutes to bake and then they’re ready to devour once cooled. If you can wait.

Ingredients

  • 1-1/2 cups packed brown sugar
  • 1/2 cup butter, melted
  • 2 large eggs, lightly beaten, at room temperature
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°.
  1. Mix together the brown sugar, eggs (beaten), butter, and vanilla. You should work the

mixture only until it just blends together. Don’t overwork it.

  1. Separately mix the flour, baking powder, and salt.
  1. Slowly combine the flour mixture into the blended brown sugar mix.
  1. Stir in all those chocolate chips.
  1. Pour the whole mixture into a well-greased baking pan, a 9 x 13” should be the right fit.
  1. Bake for roughly 18-20 minutes.

Tip: You can test if your tray is fully baked using a skewer. If you can poke into the tray and then the skewer comes out clean you’re fully baked!

  1. Cool using a wire rack and then cut into squares or bars.

Coconut Macaroons

The coconut macaroon, a tropical beach taste in a bit-sized cookie-shaped delight. Not to be confused with macarons. Macarons are tiny French meringue sandwiches. Macaroons are American shredded coconut creations. Be wary of adding too much moisture into your recipe or the mix will spread rather than keep its cookie-like shape.

They’ll take you around 10 minutes to prep and 20 minutes to bake.

Ingredients

  • 1-1/3 cups sweetened shredded coconut

  1. Bake for around 8-10 minutes or until you can see a light brown coloring.
  1. Remove to wire racks to cool.

Indoor S’mores

We can all agree that S’mores are just the best. They’re angelic, wonderful mouthfuls of taste sensations sent from the gods. The issue is, they’re typically reserved for when you’re out camping or on the trail, cooked over an open fire. We don’t think that should be the case. That’s why Indoor S’mores exist.

This is a seriously fast recipe that should take you less than 20 minutes to complete.

Ingredients

  • 4 cups mini marshmallows
  • 4 TBS butter (divided)
  • 1 cup chocolate chips
  • 1/2 cup corn syrup
  • 8 cups golden Grahams
  • Extra marshmallows and chocolate for decoration

Instructions

  1. Take 3 tablespoons of butter, corn syrup, and chocolate chips. Combine them together and microwave for around 2 minutes. You want it soft but not like lava.
  2. Stir until you have a creamy texture with no chocolate chunks left. Put this aside.
  3. Mix the marshmallows and butter in a pot and put them over medium heat.
  4. Stir continuously until the marshmallows are melted and you have a gooey mixture.
  5. Remove from the heat.
  6. Add the chocolate mixture to the marshmallows, and add the Graham crackers too.
  7. Pour everything into a well-greased 13 x 9” tray.
  8. Throw in a few extra marshmallows and chocolate chips for decoration because you deserve it.
  9. Let everything cool, set then slice up and serve.

Strawberry Tart with Whipped Cream

These are simple and tasty (just what you want from a quick recipe) but also can look incredibly classy. Perfect for if you’re entertaining or hosting a dinner party. The freshness of the strawberries combined with the richness of the cream is a match as old as time. You won’t be able to just have one.

Stick to store-bought puff pastry for this one, if you decide to make your own it’ll increase the timings considerably! Prep time is roughly 10 minutes, with a 15-20 minute bake on top.

Ingredients

  • 1 lb strawberries sliced
  • 4 tbs sugar – for strawberry coating
  • 1 rounded tbsp flour
  • 1 cold sheet puff pastry (if you’re using frozen make sure it has thawed)
  • Sugar
  • 1 cup heavy cream
  • 1 tbsp vanilla
  • 3 tbsp sugar

Instructions

  1. Preheat the oven to 400°.
  1. Combine the strawberries, 4 tbs sugar, and flour in a bowl and toss until well coated.
  1. Roll out the pastry onto a lined baking sheet.
  1. Pour the coated strawberries onto the pastry.
  1. Fold up the edges of the pastry to create lips around the outer edges. Pinch together the cracks where the pastry meets.
  1. Dust with sugar across the whole sheet.
  1. Bake for between 15-20 minutes or until the pastry is golden and crisp.
  1. Pour the cream, vanilla, and 3 tbs sugar into a bowl and whisk together until well whipped.
