The lovely herbaceous notes comes to the fore and complete this multi-layered wine beautifully,” says Pieter Badenhorst who is responsible for Fleur du Cap white wines and works closely with cellarmaster Andrea Freeborough and viticulturist Bennie Liebenberg at Die Bergkelder, the famous “cellar in the mountain” in Stellenbosch.

Crafted from the pick of the crop in the Western Cape’s finest vineyards, Fleur du Cap’s well-known Bergkelder Selection range offers quality wines that are true to their varietal character.

“We are in the enviable position to source the best grapes from a diverse range of vineyard sites and micro climates throughout the Western Cape. The fact that each region imparts special qualities to our wines is evident in this Sauvignon Blanc,” adds Pieter who recommends serving this invigorating wine with fresh lightly seasoned seafood delicacies such as mussels, shellfish, Thai dishes or green salads dressed in subtle vinaigrette.

If you enjoy trying out new things, Pieter recommends substituting the table salt in your recipes with an artisanal alternative such as Black Lava or local Khoisan Flaked salt. “It just adds an extra dimension to your dish and really brings out the full flavour profile of the Sauvignon Blanc.” he concludes.
