Beer Battered Artichoke Hearts

These 3 ingredient beer-battered artichoke hearts are a real treat, especially when it comes to matters of the heart.

One large artichoke contains only 25 calories, no fat, a bunch of potassium and is a good source of vitamin C, folate, magnesium and dietary fiber. To keep things healthy, be sure to use dressings, sauces and dips that are low in fat too.

Ingredients

Artichokes

  • 32 ounce bottle of organic, verified non gmo canola oil for frying
  • 2 – 14 ounce cans of whole artichoke hearts packed in water
  • 1 cup organic unbleached white flour
  • 1 cup beer
  • salt/pepper to taste

Dipping Sauce

  • 1/2 cup low-fat mayo
  • 2 tbsp fresh lemon juice
  • 1 tsp garlic powder
  • salt to taste
  • handful of chives, chopped

Instructions

  1. Fill a pot with a decent amount of canola oil. Heat up oil to 375 degrees.
  2. Drain artichokes and pat dry, squeezing out any remaining water. Place them on a paper towel so it absorbs the water.
  3. In a large bowl, whisk together flour and beer. Add salt and pepper.
  4. Once the oil is hot, dip artichoke hearts in batter and place in oil. Let them fry 3-5 minutes. Flipping them over if need be. Do not overcrowd the pot. Repeat the process until all artichokes hearts are fried.
  5. Place fried artichoke hearts on a plate lined with a paper towel to reduce excess oil.
  6. Sprinkle with salt.
  7. For the dipping sauce, mix all ingredients together well. Season with salt and pepper as desired.
