Bittersweet Symphony: Two Gin Cocktails To Satisfy The Most Discerning Palates

Gin has just the thing. Some like their cocktails bitter, others like them sweet. Here are two cocktail recipes that will satisfy varying palettes and, with a selection of both, they’re sure to win over even the most bitter guests.  

Something bitter:

A Gin-Campari Sour hits all the right notes when it comes to bitterness. We get it… not everyone loves sweet, syrupy cocktails. That being said, there are easier ways to say “I take myself seriously” than hating on a sweet tipple. This contemporary gin cocktail should do the trick for the *ahem* somewhat critical members of your circle. Adding egg white, simple syrup, orange bitters, and lemon juice makes for both frothiness and a pleasingly sour bite. A bonus? It looks a lot fancier than it is – perfect for those who do it all for the ‘gram’.

Gin-Campari Sour


  • 2 parts Dry Gin,
  • 1 part Campari,
  • 1 part freshly squeezed lemon juice,
  • 1/2 part simple syrup,
  • 1 egg white,
  • 1 dash orange bitters,
  • orange wedge or twist to garnish.

Add the first five ingredients to a cocktail shaker and dry shake. Open, fill with ice, seal, and shake again to emulsify. Strain into a chilled coupe glass and garnish with an orange wedge or twist. Cheers!

Something sweet

This Apricot Jam Passion cocktail is fruity, delicious, and the ideal cocktail to sip in the sun. The less serious members of your circle will love it. Plus, the bright colours will complement the upbeat vibes and the warmer weather. Who doesn’t love tasty juice in spring? Add in a little *fun* and you’ve got the perfect day drink. Hate on sweet cocktails all you like, but this one is a banger. And, you’ll likely be refilling your glass before you know it. 

Apricot Jam Passion


  • 2 parts Dry Gin,
  • 2tsp sieved apricot jam,
  • 2 parts passionfruit juice,
  • 1/2 part lime juice,
  • apricot fan or passionfruit half to garnish.

Add all ingredients into a cocktail shaker and shake well. Double strain into an ice-filled glass and garnish with the apricot fan or half a passionfruit. Sip and enjoy!
