Spring has officially arrived, even on the chilly Hemel-en-Aarde Ridge where the early budding varieties like Chardonnay have just started the bud burst phase of their growth cycle.
Buds, which are situated between the stem and the petiole (leaf stem), first appeared during the summer growth period of the previous growing season. As the soil temperature rises osmotic forces push nutrient-rich water up into the dormant vine. Tiny shoots use the reserves of carbohydrate stored up before winter and will produce the first leaves of the new season, helping to accelerate growth and start the photosynthetic processes.
With spring in the air and the bees buzzing around the buchu and other fynbos in our garden, what could be more perfect than a glass of Creation Merlot, Cabernet Sauvignon, Petit Verdot with our chef’s hearty Shortrib and Waterblommetjie Bredie with Samp and Popcorn Purée. A walk along the banks of the lake provided the fresh waterblommetjies and the combination is truly delicious!
