Chicken, Bacon and Potato Tray Bake with De Grendel Merlot

Merlot pairs excellently with red meats, whether they’re grilled, roasted, casseroled or braaied, as well as with vegetarian dishes. Surprisingly, it also works well with unexpected foods like chicken. Anina Meyer’s Chicken, Bacon and Potato Tray Bake, is a great match with the De Grendel Merlot 2016.


Chicken tray bake

4 or 6 chicken thighs
10 ml chicken spice rub
400 gr baby potatoes
125 gr streaky bacon
30 ml olive oil to drizzle
salt and black pepper to season
300 gr vine tomatoes

Herb Sauce

handful fresh mint
handful fresh parsley
30 ml olive oil
zest from one lemon
salt and black pepper to season


  1. Rub the chicken thighs with spice rub and arrange in an oven safe baking tray.
  2. Place the baby potatoes and streaky bacon in between the chicken thighs.
  3. Drizzle with olive oil and season. Bake at a pre heated oven at 180 degrees Celsius for 30 min, covered with foil.
