(Also known as the heartbreak grape) Pinot Noir is particular, sensitive and allows little room for error; it needs special care and attention and growing this fruit is more courtship than cultivation. Turning the grape into a wine offers no respite from the fastidious care as delicacy and capriciousness require attention and charisma. Pinot Noir and duck are a sure fire bet, the fatty duck is chaperoned to marvellous heights by Pinot Noir’s acidity and freshness, a spiced duck with confit ragù or duck breast with pomegranate-citrus glaze are memorable pairings.

Pinot Noir also loves mushrooms; the wilder, the better. Roast them with herbs and dress them up with a little cream or garlic topped with a poached egg.
