Pinot Noir is an enchanting wine variety with a quirky personality; part of the fanaticism around this varietal stems from the challenge farmers experience growing it and winemakers face producing it. (Also known as the heartbreak grape) Pinot Noir is particular, sensitive and allows little room for error; it needs special care and attention and growing this fruit is more courtship than cultivation. Turning the grape into a wine offers no respite from the fastidious care as delicacy and capriciousness require attention and charisma. Pinot Noir and duck are a sure fire bet, the fatty duck is chaperoned to marvellous heights by Pinot Noir’s acidity and freshness, a spiced duck with confit ragù or duck breast with pomegranate-citrus glaze are memorable pairings.

Pinot Noir also loves mushrooms; the wilder, the better. Roast them with herbs and dress them up with a little cream or garlic topped with a poached egg.
