Delicious and Nutritious Sweet Potato Pancakes

These pancakes from bionic-bodies are made with no nasties and only use healthy ingredients! They’re super easy to whip up too, so your lazy Sunday can remain just that.

Ingredients

  • 100g liquid egg whites
  • 1 whole egg
  • 140g steamed/boiled sweet potato
  • 120g oats
  • 240g 0% Greek yoghurt
  • 1 TSP stevia for extra sweetness (optional)
  • 1 TSP cinnamon/nutmeg/allspice (optional)
  • Coconut oil for frying

Instructions

Add egg whites, whole egg, and milk and blend until smooth. Add sweet potatoes and yoghurt and blend again. Finally, add oats plus optional ingredients and blend well.

In your frying pan, melt a knob of coconut oil. Pour your batter into the pan and cook until golden on each side. These pancakes are quite delicate so make sure they are cooked properly on one side before turning them to the other side.

Optional extra ingredients include: raisins, chocolate chips, blueberries, dedicated coconut, or chopped nuts. Add any spices when combining your ingredients in the blender. Add the other extras once you have flipped your pancakes. That way they will stick into your pancake without being overcooked. You can also try experimenting with toasted nuts.
