Fire Roasted Corn and Bacon Guacamole With A Dash Of Tequila

This just may be the most drunken Fire Roasted Corn Guacamole that you will ever have! Complicated? Not at all. It takes roughly 15 minutes to roast, chop, dice, grind and mix this lovely relish. Add some bacon and tequila and you have a winning dip for your next party.

These ingredients below is just a small batch, so for a bigger party, you should consider doubling it.


  • 1 ear fresh sweet corn
  • 1 jalapeño
  • 250g bacon, diced and fried
  • 2 ripe, Avocados, seeded and peeled
  • 1/4 cup chopped tomatoes and onion mix (you can use a tin)
  • 1 Tbsp. lime juice
  • 1 Tbsp Tequila
  • 2 Tbsp. fresh cilantro, chopped
  • 2 large cloves garlic, minced
  • 1 tsp. kosher salt
  • As needed Black pepper, to taste
  • As needed (optional) – parmesan cheese for garnish


  1. Roast the corn and jalapeño over the fire until blistered and charred on all sides. Be careful not to burn it! After cooling for a few minutes, cut the corn off of the cob.
  2. Fry the diced bacon in some oil and drain well on paper kitchen towel.
  3. Chop the avocados then mix in the tomato and onion mix.
  4. Seed and mince the roasted jalapeño.
  5. Add the jalapeño, fresh lime juice, tequila, cilantro, roasted corn, bacon, garlic, kosher salt and pepper to the avocado mixture. Adjust seasonings and serve.

Serving Suggestion: Garnish with parmesan cheese if desired.
