Pouring beer at home can be hit and miss: too much foam, not enough, and never ever the same as in a bar, that’s for sure. But help is at hand, in the form of beer science.

In this video, Chris Clarke explains five scientific steps for pouring the perfect beer at home. In scientific terms, you’re trying to control the rate of formation of bubbles—sometimes called nucleation—to ensure a predictable build-up of foam. Some of the resulting advice is easy to take on board: use a clean glass, angle it at 45 degrees as you pour, that kind of thing. But his final suggestion—to take measured mouthfuls of the drink—may take some getting used to. But it’s all in the name of science, right?
