How to make Eggplant Meatballs

INGREDIENTS

1 pound eggplant
1 tablespoon olive oil
½ teaspoon sea salt
freshly cracked pepper
¼ cup water
2 cloves garlic, minced
½ teaspoon fresh thyme, minced
1 teaspoon fresh sage, minced
2 tablespoons fresh basil, chopped
1 ½ cups Italian style bread crumbs
2 ounces grated Parmesan
2 eggs, beaten
4 cups marinara sauce
Parsley, for garnish
