How to make Salsa Verde

Traditionally served as a condiment, Salsa verde is an Italian green sauce  based on herbs and simply delicious when served over grilled vegetables or with meat and fish.

This light and refreshing combination of fresh parsley, basil leaves, garlic, capers and lemon salsa with high-quality extra-virgin olive oil from Allee Bleue is the perfect combination of flavours.


1 cup Allée Bleue flat-leaf parsley leaves
1 cup Allée Bleue basil leaves
1 garlic clove, chopped
2 teaspoons capers, drained
1/2 cup Allee Bleue extra-virgin olive oil
1 lemon, juiced
Sea salt

Step 1

Place parsley, basil, garlic and capers in a food processor. Process until finely chopped.

Step 2

With the motor running, add oil and 2 tablespoons lemon juice to parsley mixture. Process until well combined. Season with sea salt and pepper. Stand for 10 minutes. Serve with barbecued lamb or fish.
