Kick Dry January To The Curb With This Vodka-free White Russian

Before we get started, it’s important to mention that the White Russian achieves its distinctive colour and taste with the use of Kahlua. You, therefore, need a substitute for a non-alcoholic version of this cocktail.

Coffee Syrup

With Kahula being coffee liqueur flavoured with coffee beans, vanilla beans and sugar, you will have to make your own coffee syrup. It’s important to use fresh coffee. The stronger the taste of the coffee, the better it is. If you like, season your coffee with a fresh vanilla bean or add in one or two drops of vanilla extract.

Ingredients

  • 1 cup chilled espresso, brewed extra strength
  • 1 cup brown sugar
  • two drops of vanilla extract

Instructions

  1. Combine sugar and extra-strength coffee in a medium saucepan. Bring to a boil, stirring constantly to dissolve sugar.
  2. Lower heat and simmer for 3 minutes, stirring often.
  3. Transfer coffee syrup to a container and let come to room temperature. Seal and store tightly covered in the refrigerator for up to 1 month.

White Russian

White Russians are traditionally served over ice in a rocks glass. Blending the ice or using chips rather than cubes will water down the drink. To ensure an even split between coffee and cream, pour the cream into the glass with the ice already in it, over the back of a spoon.

Ingredients

  • 1 cup of freshly brewed espresso coffee
  • 3 ounces / 90ml of coffee syrup
  • dash of honey for sweetness
  • 3 ounces / 90ml fresh cream
  • ice cubes

Instructions

  1. Pour the coffee, honey and coffee syrup into a tall glass
  2. Add the ice cubes
  3. Pour the cream into the glass with the ice already in it, over the back of a spoon.
  4. Enjoy!
