Mac and cheezeburger bake for Green Monday

Ingredients

  • 225g elbow macaroni
  • 1 tablespoon olive oil
  • 225g seitan, finely minced (see notes)
  • 1 tablespoon soy sauce
  • 1 cup firm tofu, drained
  • 1½ cups plain unsweetened
  • non-dairy milk
  • 1¼ cups vegetable broth
  • ½ cup nutritional yeast
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 1 teaspoon prepared yellow mustard
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon turmeric
  • ¼ teaspoon black pepper
  • ⅓ cup fresh breadcrumbs
