Make Your Own Hamburger Soup Topped With Pickles

Ingredients

  • 1 lb. (450 g) lean ground beef
  • 2 onions, thinly sliced
  • 2 tbsp (30 mL) olive oil
  • 5 cups (1.25 litres) chicken broth
  • 1 can (14 oz./398 mL) crushed tomatoes
  • 1/2 cup (125 mL) large dill pickles, sliced
  • 1 tbsp (15 mL) ketchup
  • 1 tbsp (15 mL) Dijon mustard
  • 1 tbsp (15 mL) Worcestershire sauce
  • 1 tsp celery salt
  • 3/4 cup (75 g) macaroni
  • 4 hamburger buns

Instructions

  1. In a large pot, brown the meat and onions in the oil.
  2. Add the remaining ingredients except for the macaroni and buns. Mix well.
  3. Bring to a boil and simmer for 15 minutes. Skim as needed.
  4. Add the macaroni. Bring to a boil and cook for 12 minutes or until the macaroni is al dente. Season with salt and pepper.
  5. In a grill pan over high heat, toast the buns on each side. Serve with the soup.
