Meatloaf Cupcakes Wrapped in Bacon

These mince cupcakes wrapped in bacon and topped with mash potatoes are pretty much the most indulgent meatloaf you’re going to meet.

Ingredients

  • 1 1/2 pounds ground beef
  • 1 cup bread crumbs
  • 1 onion, finely diced
  • 1 egg, lightly beaten
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (8 ounces) can tomato paste
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 tablespoons Worcestershire sauce
  • 12 slices bacon
  • 5 potatoes
  • 1/4 cup Cheddar cheese, shredded
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1/2 teaspoon salt
