Mexican Polenta With Bacon

The recipe from recipes from a pantry is super easy to make. Fry the bacon, add in some sweet corn, spring onions, tomatoes and smoky chipotle paste. Add this mix along with some refried beans to a creamy and cheesy polenta, bake for 20 minutes and you are done. The result is bacon, Mexican food and polenta heaven! Check out the video below.

Ingredients

FOR THE POLENTA

  • 1 L (4 cups) vegetable stock
  • 160 g (5.6oz) polenta
  • 6 tbsp of grated parmesan
  • Salt

FOR THE MEXICAN MIX

  • 6 slices of bacon diced
  • 4 spring onions sliced
  • 125 g (4.4oz) sweet corn
  • 3 large tomatoes chopped
  • 2 tsp chipotle paste
  • 400 g (14oz) refried beans
