Pairing food with tequila

These days Tequila is far removed from its old reputation. Sure, most of still shoot it down to get our happy on, but over the year’s we’ve learned that it can also be sipped. The process of making fine-aged tequila is just as involved as a fine wine or Cognac so we might as well treat it as one.

Here are some great pairings of Tequila and food to host your next Mexican fiesta.

Fresh and robust food

Look for fresh ingredients to use, and plenty of it! Bottled salsas are convenient, but nothing compares to a freshly made salsa that tickles the palate.

Meal suggestion: Serve roasted red chile salsa with your meal. Roasting concentrates the flavours of the chiles, and adds a deep smoky taste that particularly favours aged and oaky tequilas.

Meal suggestion: Seafood ceviche (with lime and chilies) and marinated meats cooked over mesquite. These two dishes go really well with a smooth tequila be it a Silver, a Reposado or Anejo.

Pairing Tequila with food is very much like pairing wine, you look for things like acidity and freshness to cut through fat, and things like tannin and bitterness to help break down meaty dishes.
