Cola Pulled – Pork Sliders: Recipe

Trendy, cool and super tasty. I love this way of cooking pork, the sweet, spicy gooey sauce clings onto each piece of pulled pork, and oh my goodness it is good! Just slap the pulled meat between a soft bun, add some pickles, mustard, lettuce and jalapenos, and you will find yourself in slider heaven.

Ingredients
Makes about 20 – 24 mini sliders

1.4 kg pork shoulder
2 liters cola
18 soft mini rolls
Sliced pickled gherkins
Pickled jalapenos – sliced
Shredded lettuce – 1 head
Yellow mustard
For the rub –
15ml garlic powder
10ml salt
10ml pepper
15ml paprika
10ml dried mixed herbs
Oil

Recipe
Preheat the oven to 160 degrees C

Combine the rub with enough oil to make a paste

Rub the pork with the paste and place in a tight fitting ovenproof dish

Pour over 1l of the cola and cover with foil

Roast for 4-5 hours, and top up with cola if meat look dry

Allow to cool and shred with a fork and you hands

Pour over some of the meat juices to coat the meat

Serve in rolls topped with gherkins, jalapenos, lettuce and yellow mustard

DEE’S NOTES
Once the meat is pulled, you will see that it is quite dry, it is essential to moisten it with the pan juices. This will also add to the great flavor
Make large ones if you don’t want the mini sliders
Check the meat ever hour
You can add any garnishes you like – the options are endless
