The KnowItALL Burger – a classic style burger but with local knowledge
Note the hand crafted mustard and tomato sauce in the background. And of course, the Alchemy White.
The story:
This burger has its origin in Cape Town’s hipsterdom, where provenance and seasonal and ironic beards are the order of the day. Sometimes ironic beards can simply be bad facial hair but here at Batonage dot com we believe that knowing where your food (and drink) comes from, is an essential life skill to survive today’s ready-meal-convenience culture.
We are also disciples of the low carb lifestyle (shoot us but don’t feed us potatoes, please) so we are serving this bundle of deliciousness on a giant black mushroom. We do have a low carb bun handy, but it was asking such high appearance fees, that we never could get a shot of it.
The recipe/ingredients:
The basics – mince purchased from Ryan Boone at De Warenmarkt
The flavour – top secret, well Googled blend of spices purchased from Atlas in the Bo-Kaap & Chipotle from El Burro because we support local awesomeness
The essentials – smoked neck bacon from Curedeli, situated in Bergvliet and purchased at the Oranjezicht Farm Market
The added extra – Montagu Cheese, 4 month matured pasteurized cheddar purchased at De Warenmarkt
The good stuff – onions and mushrooms sourced from Oranjezicht Farm Market
The cherry on top – Hand crafted mustard and tomato sauce from new Cape Town supplier Goes Well With, who traces all ingredients in their products back to their origin; the mustard is Dijon style and made with Hartenberg Noble Late Riesling and the farm’s honey while the tomato sauce (sugar free, of course) is made with sun ripened tomatoes from Oranjezicht Market.
All fried in smoked butter purchased from Wild Peacock and smoked by Aphrodisiac Shack in Villiersdorp. They source the butter from Klein Rivier.
The salad – gherkins made by George Jardine at the Bakery at Jordan, because life is too short to eat lettuce.
The wine:
Paired with the gorgeous Alchemy White as it stands up nicely to the spice in our burger. Bonus factor: We absolutely love this wine and it was an excuse to crack open the second bottle to “double checkâ€. We are still “double checkingâ€.
