Uni makes Kyoto Garden Sushi unique

One of the biggest losses in the brave new South Africa of today is diversity at the sushi bar. In the heady days when I was a graduate students in Johannesburg and universities worked, ikura was a standing order at the sushi bar in Norwood. As democracy grew, those big orange salmon balls withered away to gritty crab roe and then nothing. SA sushi never extended to sea urchin until now. Scott Wood, owner of Kyoto Garden Sushi, now imports uni from Santa Barbara and it is nothing short of spectacular.

This is surely what fine dining is all about and not the razzmatazz of foams and jus beloved of the gullible gourmets at Eat Out. Correct ingredients correctly prepared and served in a sympathetic environment with chopsticks sharp enough to knit Belgian lace.
