Why? Cape Town is flavour of the month for international foodies. The Spectator, newsletter of the UK Conservative Party, even discovered the hipster heaven of Bree Street this month. It made the point that five years ago, fine Cape Town dining was queueing at Willoughby & Co, “a sushi joint in the rather anaesthetic Victoria and Alfred mall”. All true, although to keep you hydrated while you waited for a table with your shopping trolley, Charles Back caused glasses of his Fairview wines to be served.

A tradition which continues to this day. The most appropriate, if salmon nigiri is on the menu, is this sharp blend of grenache, carignan and cinsault, which is as fresh as a breaking Atlantic roller. Which is why it was launched at the start of spring at Willoughby’s, along with assorted sushi.

The colour of rose quartz, the first seduction of this wine is visual. Quartz- hosted gold deposits have provided South Africa with untold billions over the years. So it is fitting to see a renewable resource like this symphony of red cherries and goji berries take over from the gold mines of the past.

Bone dry, it is a good example of those lifestyle rosés that make summer so special and affordable.
