The five sake-producing areas of Hy?go Prefecture?known collectively as the Nada gog??rank first for volume of sake production. These breweries, which grew rapidly in the Edo period (1603?1868), continue to prosper today. We introduce you to their history and to the natural features of the area conducive to good sake-making.
