Scrambled Egg and Cucumber Sandwich

The Scrambled Egg Sandwich with Cucumber is a protein-packed sandwich with scrambled eggs, cucumber and cream cheese. It’s the perfect lunch box or picnic treat.

Bring some fizz to the party! We suggest any Cap Classique from South Africa. Don’t turn it into a Mimosa. It will spoil not only the wine but also the crisp and refreshing taste the cucumber brings to the sandwich.

Ingredients

8 slices of whole wheat bread

3 eggs

2 cucumbers, peeled and sliced

cream cheese spread, as required

a tablespoon butter

salt and black pepper to taste

Instructions

  1. whisk the eggs in a bowl, along with salt and pepper until light and fluffy. Heat 1 tablespoon of butter in a pan; add in the whisked eggs and keep stirring the eggs, on medium heat until all the eggs come together and look like a crumble.
  2. Once the egg are cooked and scrambled, turn of the heat and keep it aside.
  3. Now the next step is to assemble the sandwich.
  4. Place the slices of bread on a flat surface. Spread the cream cheese on the bottom slice of the bread.
  5. Place the sliced cucumber on the top. Sprinkle some salt and pepper on the cucumber. 
  6. Next, spoon the scrambled egg mixture on top of the cucumber and cover with the other slice and press it down to make the sandwich.
  7. Serve it with fresh and soft bread.
