Sparkling Wine-Spiked Strawberry Sorbet

If you love ice creams, sorbets, popsicles and all those delicious things then this recipe is for you. Strawberries are in season now and sparkling wine is a must for the summer season. Add a bit of lemon and you’ve got an ULTRA summer dessert that will leave you feeling less guilty.

Ingredients

Sorbet:

1 1/3 cups sugar
1 1/3 cups water
3 cups chilled strawberries, hulled and quartered
1/2 cup chilled brut sparkling wine
2 tablespoon lemon juice
zest of one lemon

Garnish:

Halved strawberries
Mint leaves

Instructions

The day before you want to start this recipe or early the morning of, place your ice cream maker mixing bowl in the freezer. These need to freeze at least 8 hours before they can be used.

Heat sugar and water on the stovetop. Bring to a simmer and continue simmering for 5 minutes. Remove from heat and cool to room temperature. This step can be done ahead of time and stored in the refrigerator until ready to use.

Combine the strawberries with half a cup of the cooled simple syrup in a food processor. Process until liquified.

In a large mixing bowl, combine the strawberry mixture with the remaining syrup, sparkling wine and lemon juice/zest. Mix well.

Add mixture to an ice cream maker. Spin for 25 minutes until thick and slushy.

Transfer to an airtight, freezable container. Set in the freezer for 4 hours for the mixture to solidify.

Serve with a sliced strawberry and mint leaf garnish.
