Cut costs in the kitchen with this big-batch traditional South African stew. With just a few pantry staples, this recipe comes together quickly, serves about 8 and overdelivers on taste and flavour.
Ingredients
- 1kg of mutton or lamb piece
- flour for coating
- 2 small tins tomato paste
- 1 tablespoon sugar
- 1 onion, chopped
- salt
- black pepper
Instructions
- Coat the mutton or lamb pieces with some flour and fry the piece in a heavy-bottom pot in a bit of oil on stovetop until brown.
- Add the onion to the lamb and fry until fragrant.
- Turn down the heat to medium-low.
- Mix the tomato paste with the sugar and add to the lamb. Mix well, cover pot and cook on low for 30 minutes.
- Once the meat is soft, flavour with a lot of black pepper and salt and serve with white rice, polenta or pap.
