Knysna is home to the haunting beauty of Africa’s southernmost Afromontane forest. Deep within the forest, a creature known only to this part of the world exists – the Phantom Moth. Phantom is named after this ghost moth and pays tribute to the wild spirits that dwell in this delicate ecoregion. From the majestic elephants whose trails are long forgotten to the slow-footed dwarf chameleon and regal Knysna Lourie to name a few.

This London Dry style gin is handcrafted from botanicals sourced from Knysna and infused with natural fulvic trace minerals that lend to its unique earthy colour and offer you a taste of the ancient forest.

Tasting notes

Soft enchanting nose with juniper and a unique hint of wood & spice. Sweet nuances of caramalised orange on the smooth palate with a refreshing herbaceous mint aftertaste.

We distil Phantom Gin with Durbanville Distillery using their new age cold-distillation technique. The spirit base is crafted from the distillery’s handmade grain alcohol. The gin is macerated with the botanicals overnight and triple cold-distilled with botanical vapour infusions. Created using carefully selected key ingredients: Juniper, Coriander, Sweet Orange Peel and Lion’s Tail also known as wild dagga sourced from Knysna.

The colour

We add Fulvic Trace Minerals after distillation which does not impart a flavour to the gin but turns it jet black in the bottle. The mineral is plant based and 100% natural not created from dye or additives.

What is cold-distillation?

Cold distillation is when a vacuum is created within the still, lowering the boiling-point of alcohol. The boiling temperature is brought from the traditional 78°c down to a low 28°c. Cold distillation leaves the structure of botanical molecules unchanged. This process allows the natural flavours and aromas to shine which would otherwise be boiled and altered by traditional distillation. Drinkers will find that the juniper in cold-distilled gins impart a more gentle grassy flavour profile than that of copper distilled juniper which is more piney in flavour. Cold-distillation is praised for its ability to create incredibly smooth clear spirits with bright fresh flavours.
