When most people think of Asian food and wine pairings they usually think Chinese, Japanese and Thai, but seldom do I hear of people talking about pairing wines with Vietnamese food – in fact, I can’t remember the last time I even saw a wine list in a Vietnamese restaurant in Hong Kong; until now.

Last week I went for a Vietnamese wine dinner in Chom Chom in Central, Hong Kong and the food pairings were a pleasant surprise, so I hooked up with chef and owner Peter Cuong Franklin to find out more about the potential of Vietnamese food and wine pairings and to ask why no-one in Hong Kong considers this.
