Drizzle and Dip took a classic croque-madame and turned it on its head adding spinach to the béchamel and replaced the ham with smoked salmon.

 

Today I was lucky enough to attend a winter tasting menu at Durbanville Hills Winery in their restaurant DH Eatery,

 

I do so love good looking food.

 

The inspiration behind this recipe comes from my brother in law Thomas, who made this soup for me many years ago when I visited them in the US. 

 

I had a beautiful brinjal and a heap of courgettes which I had bought at the City Bowl Market on Hope street and was I craving a meal with some level of comfort.
