What are sulfites and what purpose do they serve for the wine?

Contrary to popular belief, all wines contain sulfur dioxide (SO2)(sulfites) in various forms. Even in completely un-sulfured wine it is present in small concentrations. In theory, sulfites are added to a wine to help protect the wine and preserve its longevity, which in turn increases the aging ability of the wine itself—both in the barrel and bottle.
