Just when you thought it doesn’t get any better than good ol’ cheese ball, along comes these semi-healthy bacon balls made with sweet potato.
Also known as the Ipomoea batatas, sweet potatoes are among the best sources of Vitamin A and contain many nutriens. Scientists have determined that sweet potatoes contain anti-inflammatory, anti-diabetic, and anticancer properties.
Ingredients
- 500 g sweet potato, cooked and mashed
- 125 g cheese of choice, grated
- 250 g bacon, finely chopped
- 2 large free-range eggs
- 20 g spring onion, finely sliced
- 125 ml flour
- 2 large free-range eggs
- 200 g fresh bread crumbs
- 50 g Parmesan cheese
Instructions
- Combine the sweet potato, cheese, bacon, 2 eggs and spring onion and mix well.
- Have three mixing bowls ready – one for the flour, another for the eggs and the third for the bread crumb and Parmesan Cheese mixture.
- With floured hands, form the dough into balls.
- Roll each ball in the flour, then in the egg, and lastly in the breadcrumbs.
- Heat the oil and fry the balls in batches for 5 to 7 minutes.
- Drain on absorbent kitchen paper and serve.
