Cafe Mexicano Cocktail

Make your own Cafe Mexicano with a Diablo twist.

Ingredients

  • 8 cups of cold water
  • 1/3 cup dark brown sugar
  • 1/2 ounce finely chopped baking chocolate
  • 2 whole cloves
  • 1 cinnamon stick broken in half
  • 1 cup regular grind coffee
  • 1 teaspoon vanilla
  • 1/4 cup brandy
  • 8 tablespoons coffee liqueur

Instructions

  1. Heat water, brown sugar, chocolate, cloves, and cinnamon to boiling in 3-quart saucepan; reduce heat.
  2. Simmer, uncovered, for 15 minutes.
  3. Stir in coffee.
  4. Remove from heat; cover and let stand 5 minutes.
  5. Stir in vanilla.
  6. Strain coffee through 4 thicknesses of cheesecloth.
  7. Keep hot in saucepan after straining.
  8. Heat brandy just until warm in a small, long-handled saucepan.
  9. Remove from heat and ignite.
  10. Pour flaming brandy over coffee.
  11. Allow the flame to burn out and stir.
  12. Pour coffee into cups or mugs.
  13. Top each with whipped cream and 1 T liqueur.
  14. Garnish with the cinnamon stick, if desired.
