New Hamm and Uys Eatery Marries Heritage and Nostalgia at Blaauwklippen

DYNAMIC TV chefs and creative caterers Johnny Hamman and Marius Uys are bringing South African heritage food with global, modern flair, to historic Blaauwklippen wine estate with their restaurant Hamm & Uys opening on Sunday, 8 September, in Stellenbosch.

Inspired by the surroundings on the 337-year-old farm with its carefully preserved heritage buildings, the country-style, relaxed eatery will offer the “nostalgia of your mom’s cooking, re-invented for the modern palate”, says Johnny.

Hamman and Uys met on the set of the second season of reality cooking show Kokkedoor, which Johnny went on to win, and are well known for their bespoke catering company Slippery Spoon Kitchen which specialises in tailor-made events and unique food experiences for weddings, private and corporate gatherings.

From traditional Sunday roast lunches to Cape classics with a modern spin – such as hot cross streamed bao buns with hot pickled fish and cape pickles – diners can expect country-casual food in relaxed surroundings with the pair’s typical creative flair and fun touches.

The casual restaurant, or ‘eatery’ as they like to refer to it, with classic winelands elegance and modern touches, will focus on “the good, honest food we grew up with” combined with their global culinary experiences and inspiration. “We want the classic feel of the farm to be visible in the food,” Johnny said.

Taking their cue from the Blaauwklippen mantra of “inspired by the past, passionate about our future”, the menu offers “South African heritage, casual cuisine, with a global mindset”, said Uys. 

Simplicity is key, with the “wow factor” in historic flavours and quality ingredients, offered alongside Blaauwklippen’s range of wines made in tune with nature.

The new restaurant is part of extensive revitalisation underway Blaauwklippen, one of the original Stellenbosch estates, founded in 1682.

Hamm & Uys opens at 10:00 on Sunday 8 September with a celebratory lunch and will trade Tuesdays to Sundays from 10:00-17:00, opening ‘til late on Fridays with special dinners to kick off the weekend, and the classic roast table for relaxed Sunday lunches.
