Some good folk in the US decided that the 22nd of June will forever be reserve to celebrate the existence of the little chocolate dipped pastry delight we call the Chocolate Eclair.
Allegedly created in the nineteenth century by the famous French chef, Antonin Carême, the Eclair makes for the perfect accompaniment to classic cocktails.
Old Fashioned
The revival of the Old Fashioned in the mid-nineteenth century may very well coincide with the creation of the Eclair, but the union of the two goes beyond simple timing. The spice and heat of the whisky, together with hints of orange from the garnish and bitters, add that extra layer of flavour to the creaminess of Eclair.
