Forget Banana Bread! Try Banana Soup Instead

If you thought that bananas were just for monkeys and baking bread, think again! 

You won’t often find this popular yellow fruit in a soup, but you’ll love how the uncommon addition’s sweetness helps balance the spice in this morish bowl. The flavours very much remind one of Thailand and what’s more, bananas are loaded with a bunch of incredible health benefits.

Ingredients

  • 1 Tbsp oil
  • spring onion
  • 1 Tbsp garlic, sliced
  • 400ml coconut milk
  • 400ml veggie stock
  • 1 tsp white pepper
  • 3 tbsp soy or fish sauce
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 2 ripe bananas
  • 1 large red chilli
  • limes, to serve

Instructions

  1. Heat oil in pan and fry spring onion and garlic quite fast. Add all the other ingredients in order and cook for 5 minutes.
  2. Blend half of the soup in a food processor, add back to the pan with chopped chillis. Blend well and serve warm with lime wedges.
