Homemade Pizza With Smoked Mozzarella, Chorizo And Fresh Basil

eing cheesy is only good when you’re a sandwich or a pizza… Try this delightful dish – a home-made pizza with plenty of smoked mozzarella. It makes a huge difference to your mood – something we can all do with during these crazy times! And, if you run out of wine, you can still get the Leopard’s Leap Natura De-alcoholised Classic White and Red at major retailers such as Spar, Pick n Pay and Makro! Both will work with this pizza, so choose your favourite and love lockdown!

Ingredients

  • 1 home-made pizza base (see recipe below)
  • 60 ml home-made tomato sauce (see recipe below)
  • 80 g smoked mozzarella, in large slices
  • 40 g chorizo, thinly sliced
  • 10 g fresh basil, thinly sliced
  • salt to taste

Instructions     

  1. Preheat the oven and roasting tray to 200 °C.
  2. Onto the hot roasting tray, place the rolled-out pizza base.
  3. Using a spoon, spread the tomato sauce over the pizza base, right up to the edge.
  4. Spread the smoked mozzarella evenly over the base.
  5. Add the chorizo, evenly spread out.
  6. Place the pizza into the preheated oven.
  7. Bake until the cheese is melted and bubbly (the sides of the pizza must be browned).
  8. Remove from the oven.
  9. Sprinkle over the fresh basil.
  10. Using a pizza cutter, cut the pizza into rustic slices.
  11. Add salt to taste.

Serve hot and with a glass of 2019 Leopard’s Leap Chenin Blanc. Cheers!

Pizza bases                    

Yields 10 bases

Ingredients                           

  • 1 kg fine bread flour
  • 10 g instant yeast
  • 20 g salt
  • 750 g water

Instructions                                

  1. Combine the bread flour, salt and instant yeast in a large mixing bowl.
  2. Pour the water into a small pot over low heat and warm to between 30 and 32 °C.
  3. Add the water to the dry ingredients and mix well.
  4. Allow the dough to rest in a warm spot until it has doubled in size.
  5. Once the dough has doubled in size, knock it back and portion into 150 g rolls.
  6. Place the rolls onto a lightly floured surface.
  7. Allow the dough to rest again.
  8. Using a rolling pin, roll the dough out on a floured surface.
  9. Roll each pizza base out into an oval shape that will fit onto an oven roasting tray.
