Sommelier’s Choice: Pawel Wagner from Aubergine

In this popular series we feature selected sommeliers from top restaurants around the world. This week we welcome Pawel Wagner from the iconic Aubergine in Gardens, Cape Town.  

Pawel says:

I’ve always held Creation Wines in high regard as I appreciate the team’s infectious enthusiasm. Their passion shines through from the way they treat their grapes all the way to sipping a glass of Creation wine!

I chose the 2014 Creation Reserve Pinot Noir because Burgundian varieties have always inspired me. The thin skins are key to the natural acidity and soft tannins that make these wines elegant and beautiful. On the nose, Creation’s Reserve Pinot Noir reveals dark cherry, delicate savoury herb aromas as well as mushroomy notes, pomegranate and star anise. The wine is still at a youthful stage but shows amazing potential. It enters your mouth with great fruit expression and the tannins carry through to your mid palate, ending with a dry, elegant finish with balanced acidity.
