Easter Eggnog with Amarula

Although most people think of Eggnog around the winter holidays and Christmas, why should Santa have all the fun? 

To make a truly South African version of this famous holiday drink we suggest you add some Amarula to it. This Spirit of Africa Liqueur has captured the heart of the marula ruit’s uniquely exotic aromas.

Ingredients

  • 6 eggs
  • ¼ cup sugar
  • 4 cups milk
  • 1 tsp vanilla
  • A big pinch of nutmeg
  • A big pinch of cinnamon
  • 90 ml Amarula
  • 30 ml Brandy
  • Grated nutmeg for garnishing

Instructions

  1. Crack the eggs into a bowl, add the sugar and beat until the sugar has dissolved. Add half of the milk and mix well.
  2. Place on a gentle heat and mix uninterruptedly until the mixture thickens. Keep a careful eye on the mixture as it can overcook quite easily. If it looks like it is about to boil take it off the heat immediately.
  3. Add the milk, nutmeg and cinnamon, mix well and place in the fridge to cool. If it has separated slightly, you can fix this when it is cool by using a stick blender.
  4. Once the mixture has cooled down, mix in the Amarula and brandy and garnish with grated nutmeg.
